A few years ago, my husband and I started cooking with purple rice, purple wine, and purple vinegar.

Then let it sit for 10 minutes.
When you have it bubbling and thickening, add the sugar.
Let it sit about 5 more minutes.
Let that sit for 5 more.
Then, when you have a thick sauce, add in the rice vinegar, sugar, and salt (in a little at a time).
You can leave the sauce on for about 30 minutes to allow the rice to ferment.
The result will be a thick, creamy sauce that you can taste.
I’ve made this purple rice and purpens vinegar sauce several times and it has become one of my favorite vinegar sauces.
It’s a great addition to my red rice pasta sauce.
