Preheat oven to 190C/350F.2.
Chop the chicken breasts in half lengthwise.3.
In a saucepan, add the garlic, chili powder, cayennes pepper, ginger and salt and bring to a simmer over low heat for 20 minutes.4.
Meanwhile, mix the chicken and water together and bring it to a boil, then reduce the heat to low and simmer for 20 more minutes, stirring occasionally.5.
When the chicken is done cooking, drain the water and add the rice flour and stir until smooth.6.
When rice flour is soft, add in the rice wine and stir to combine.7.
Add in the chicken stock and the rice mixture and stir gently until the rice is smooth.8.
Add the soy sauce, honey and cori and stir well to combine, then pour the cooked rice mixture into the bottom of a baking dish.9.
Bake for 20 to 25 minutes until golden brown.10.
Meanwhile in a bowl, add together the chicken, chicken stock, rice flour, corianders and rosemary and mix to form a smooth batter.11.
Place a baking tray over a wire rack and allow to cool for 5 minutes before cutting into individual servings.12.
To serve, spoon the chicken into a bowl and top with the chicken rice.13. Enjoy!
